The recipe he learned came from a Mozambique-born lady who fled the revolution in Mozambique and eventually made her way to Cape Town. It is a recipe that he has modified and refined since the mid 1990’s and has been a work in progress. A labour of love, if you must.
The sauces and marinades have been developed to give you a flavour of Southern Africa and the heat that it is renowned for.
