Contain four cultivars of chillies: Scotch bonnet; African Birds Eye; Dorset Naga and Facing Heaven. Garlic, chilli, oil and mild acidity in flavours. Requires cooking.
The optimum time for marinating is between six and seventy two hours, in the fridge. This allows the flavours to be absorbed by the product you are marinating.
Sufficient for 24- 36kg meat (approximately 130 x 220g chicken breast portions – Ave 30kg) to be marinated in the marinade. The marinade can be “extended” or thinned out using either: crème fraiche/ mayonnaise/ sunflower (or olive) oil/ yoghurt etc.
